Bitter Gourd Poriyal

Clean and chop the Bitter Gourd, onion and chillis. Heat the oil in a pan, Season with mustard seeds, black gram and curry leaves.Fry until it turns the colour. Add chopped bitter gourd, onions, chilli, tomato and saute, Cook by adding water. Once cooked, add jaggery and mix well with grated coconut and serve

Ingredients

  • 250 gms Bitter Gourd Finely Chopped
  • 1 Nos Onion ( Medium Size)
  • 2 Nos Tomato Chopped
  • 3 tbsp Coconut Grated
  • 1 Nos Green Chilli Chopped
  • ½ tbsp Mustard seeds and split black gram
  • 1 Stalk Curry Leaves Fresh
  • 1 tbsp Oil Use cold press oil ( Gingelly / Groundnut)
  • 1 tbspn Jaggery
  • 50 ml Water
  • 1 tbsp (As Required) Salt Tale salt

Instructions

  • Heat the oil in a pan.
  • Season with mustard seeds, black gram and curry leaves.
  • Add chopped bitter gourd, onions, chilli and saute for 5 mins.
  • Add tomatoes, salt  and saute for 10 more mins.
  • Cook by adding water.Once cooked, add jaggery and mix well.
  • Garnish with grated coconut and fresh curryleaves.

Notes

Note:
    The dish can also be prepared by addition of ginger and garlic paste after Sauteing the onions to obtain a varying flavour. It can also be prepared without tomatoes and by adding more onions.
