Equipment

Ingredients

  • 1 Bunch Amaranthus Finely chopped
  • 10 nos Shallots Chopped
  • 3 tbsp Grated coconut
  • 1 small piece Green chilli
  • ½ tbsp Mustard seeds and split black gram
  • ½ tbsp Cumin seeds
  • 2 stalk Curry leaves
  • 1 tbsp Oil Cold press oil
  • 50 ml Water
  • To taste Salt

Instructions

  • Heat the oil in a pan
  • season with mustard seeds, black gram, cumin seeds and curry leaves
  • Add chopped shallots and saute for two more minutes
  • Once fried, add the greens, salt and saute for two more minutes
  • Close with a lid and cook
  • Remove from the stove
  • Garnish with grated coconut and serve

Notes

Note:
For those who wish for a more added flavour chopped shallots (7-8) and garlic (2 no) can be fried along with chillies before adding the vegetables. Greens are rich source of phyto oestograms. Amaranthus are packed with antioxidants which prevent early greying of hair. B complex vitamins, calcium, iron and minerals are abundant in amranthus.
The dietary fiber regulates the bowels and aids in healthy metabolism. Greens are found to be effective against various types of colon and rectal cancers and ulcers. they boost the bodys immunity.
