Equipment

  • Chopping board

Ingredients

  • 2 Cups Assorted vegetables like Beetroot,carrot, green peas and tomatoes
  • ½ bunch Spinach leaves
  • ½ cup Shallots Small onions
  • 3 nos Garlic pods
  • 2 tbsp Cooked beans (Soy or Rajma)
  • 1 tbsp Cooked Red rice
  • To Taste Salt and freshly crushed pepper

Instructions

  • Steam-cook the assorted vegetables, tomatoes, shallots and garlic with just enough water to (one whistle)
  • Add the roughly chopped spinach leaves to the cooked vegetables , cover and simmer for 5-8 minutes
  • Blend this mixture in a Blender/Food processor to a smooth puree
  • Add salt to taste and freshly crushed black pepper
  • Simmer the puree on a medium flame for 5 minutes
  • Now add the cooked beans and red rice and mix well

Note
Serve in a large soup bowls with a dash of lemon juice and finely chopped coriander leaves. Enjoy the soupy low calorie meal.
